Discovering a Local Gem
Located in the quaint town of Clifton, Colorado, Ruby's Mexican Restaurant has been serving up authentic, mouth-watering Mexican dishes since 1995. As a local resident, I have had the pleasure of dining at Ruby's on multiple occasions, but recently I had the pleasure of introducing it to some out of town visitors. Needless to say, it did not disappoint.
The Ambiance
Upon entering Ruby's, we were greeted by warm, vibrant colors and traditional Mexican decor. The restaurant has a cozy and inviting atmosphere, perfect for a casual family dinner or a night out with friends. The staff was friendly and attentive, making sure our dining experience was nothing short of exceptional.
Mouth-Watering Menu
Now, onto the most important part - the food! Ruby's offers a wide array of traditional Mexican dishes, as well as some unique specialties. Our group decided to start with their famous chips and salsa, which were freshly made and addictively delicious. For our mains, I opted for the chicken enchiladas, while my friends tried the carne asada and shrimp fajitas. Each dish was cooked to perfection and bursting with authentic flavors.
The Sweet Finale
Of course, we couldn't pass up the opportunity to try some of Ruby's signature desserts. We indulged in the homemade flan and churros, both of which were the perfect way to end our meal. I highly recommend trying both if you have the chance.

Overall, Ruby's Mexican Restaurant exceeded our expectations and left us wanting more. It's clear why this local eatery has been around for so many years - the delicious food, friendly atmosphere, and exceptional service make it a must-visit for anyone in the area.
